Best gastronomic experience in Tulum

Australian chef Paul Bently has lived in Mexico for twelve years, has several restaurants in the country, and has just opened a taqueria in Hawaii. He visits Tulum regularly because he loves to cook by the sea at his Mi Amor and Pez restaurants.

So we trust his cosmopolitan soul and his international palate, to know his favorite corners of this paradise:

With complete certainty, he comments “To start the morning my favorite place is My Love, because the dining room is very comfortable, it has a view of the sea. I suggest one of the special dishes fried eggs on a flour tortilla (very northern Mexico) seasoned with cumin, tahini, and lemon pickles “ In the highlights, predominantly French technique and ability to sauces and funds for delicious sauces that accompany fish and meat.

“If one is raw, my insider tip is to take a taxi and head out onto the highway to go to Tacos Honorio. It is the opportunity to savor what the locals eat and how they eat. ” Authentic Mayan cuisine in tacos and cakes.

A few steps ahead is Burrito Amor. A kind of tropical palapa with a lot of funky. The burritos (wrapped tortilla) are a good size. There are grilled shrimp and vegetarians among others.

“If you like seafood, go to El Pez, I am launching a menu with wood-fired seafood, roasted whole fish with Gilmore (light mole with smoked notes with charred chili). There are ceviches and oysters on the grill ”. A laid back place to eat seafood and drink Pescadores beer with ocean views.

At night I like Arca. I really like what José Luis Hinostroza does. It is a very interesting food due to its acidity through fermentation and other ingredients, beyond citrus and vinegar. I like the roast pork head and the cheek was confit with the skin.
